Ingredients

  • 1/4 of a Brie (12inch round)
  • 1/2 cup of Cognac or Brandy
  • 2 garlic cloves in very small pieces
  • Fresh ground pepper
  • 1/4 cup Cognac or Brandy

Directions

Place the Brie on a glass pie plate. Poke holes with a fork all over.Pour the Cognac all over the cheese. Put the garlic and pepper, making sure that the Brie absorbs it, even if you have to push it in a little bit. Leave on the kitchen counter for at least 4 hours, turning every hour, The smell in your kitchen will be heavenly. When you are ready to serve, put in the oven at 350 for about 15 minutes, or until it starts to melt and is quite warm.The sides should bubble and the whole Brie should leak. Bring to the table. Heat the 1/4cup of Cognac in a soup ladle , and then carry to the table and flame the cheese . Your guests will be impressed!!. Spoon in cheese plates or dessert plates , and serve with good French Bread. It is gooey and wonderful. I serve this either with drinks before an informal meal or instead of a cheese plate after the main dish, in a more formal meal.Both are very appropriate.
