• 1-3/4 lb skinless boneless chicken breasts
  • 1/2 cup fresh or canned seedless grapes
  • 1 T. butter
  • 1-1/2 T. finely chopped shallots
  • 1/2 cup dry white wine
  • 1-1/2 cup heavy cream


Pound breasts lightly and cut into strips. Rinse grapes and drain. Heat butter and cook chicken. Sprinkle w/salt and pepper and cook over high heat. Cook 3-5 minutes. Use slotted spoon and transfer to another skillet. Add shallots cook briefly and add wine. Cook over high heat shaking skillet and stirring. Add juices from chicken in another skillet. Whenn cooked in half add cream. Cook over high heat. Add fresh grapes. Cook over HI heat 4-5 minutes until cream takes saucelike consistnecy. Add salt and pepper to taste. Spoon chicken in and heat. Serve with rice
