Ingredients
- 8 oz. to a lb. Any cut of left over beef, or fresh for that matter
- 1 Red bell pepper julienned
- 1 Green bell pepper julienned
- 1 onion julienned
- 2 c. Veal stock( if you don't have any use a light beef stock it should work)
- 3 tbls.(about) Cajun spices to taste( you can probably buy a blend, or use one of your own, Paul Preaudommes is a good one)
- If you can't find either of those try equal amounts of chili powder, salt, paprika, italian spice blend (oregano, thyme, basil), and about a third the amount of gumbo file, cayenne, black pepper, and cumin
- 4 Cups rice pilaf
- Rice pilaf
Directions
Sautee onion and bell pepper till onions are transparent, add thinly sliced beef steak (any cut will do) and spices, sautee a bit longer, about 5 minutes. Add stock, let the stock reduce by half. Arrange on a bed of rice, and serve
