Leftovers can be used in many ways. Slice steak thinly, use leftover juice mixed with pkg. au jus, toast french rolls and you've got French Dip Sandwiches
Meatloaf, cubed, mixed with cooked rice and onion, makes wonderful stuffed pepper filling. You can mix this altogether, freeze, until your ready to buy your peppers.
Steak or roast can be made into almost anything Mexican. Use for taco filling, add some garlic powder, onion powder, cumin, chili powder and saute with a little water...oregano is also good. Make enchilada filling or burrito filling just add a can of refried beans and cheese, olives too.
Beef Strognoff: Saute leftover beef in cubes, or slice steak with some canned beef consomme, spices, onion diced finely and sherry. Simmer, covered for about 20 minutes....add some mushroom soup and mushrooms the last 10 minutes, uncovered....let mixture thicken and remove from heat and stir in sour cream. Great served over noodles or rice.
Leftover Steak sliced thinly, is great to stir fry...fry your steak quickly in a little oil in a wok with almonds or peanuts....remove from pan and steam your favorite veggies with 2 T. water covered...add meat back to pan thicken with little cornstarch and add soy and ginger to taste....great over rice...
Left over roast or steak, can be shredded or sliced and pan fried with bbq sauce for great bbq beef sandwiches
Leftover roast, shredded, mixed with a little sour cream, canned mild chopped chilies and spices to taste...then heated...makes great burrito filling
