Ingredients

  • Select bright-colored, firm, unblemished pumpkins.
  • 3 lbs. raw pumpkin make 3 c. cooked,mashed pumpkin

Directions

Cut pumpkin in half; remove seeds and stringy portion. Cut in small pieces and peel. Cook, covered, in 1-inch boiling salted water 25 to 30 minutes, or until tender. Drain and mash. Season as recipe directs. Cook winter squash the same way, except for butternut squash; it cooks in 12 to 15 minutes
