My husband's favorite. Not sure what it is called so I've named it for him. Not a casserole, but I think if you boiled the chicken breasts and cubed or shredded them and left out the bacon it would work out well. I usually leave out the bacon when I make it and think it tastes just as good. The combination of ingredients doesn't necessarily sound appealing, but when they are cooked slowly together it is a dish I always get compliments from. If you are in a hurry, increase cooking temp. and decrease time.
Ingredients
- 4 chicken breasts
- 1 can cream of chicken soup
- 8 oz sour cream
- 4 slices bacon
- 1 pkg. Carl Budding pressed beef (very thin prepackaged sandwich meat)
Directions
Line 9x13 baking pan with pressed beef. Pound chicken and wrap each breast with a slice of bacon. Place on top of beef. Pour sour cream and soup mixture on top of chicken. Cover with foil and bake 4 hours at 275.
