Ingredients

  • vegetable oil spray
  • 3 cups flour
  • 3/4 tsp. salt
  • 1/4 cup sugar
  • 1 tsp. baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp. cream of tartar
  • 1/3 cup low-fat margarine
  • 1 1/4 cup buttermilk*
  • 1/3 cup currants
  • 1 Tbsp. caraway seeds, optional

Directions

Preheat oven to 350 degrees. Lightly spray a cookie sheet with vegetable spray. In large bowl, sift together flour, salt, sugar, baking soda, baking powder, and cream of tartar. Cut in margarine until mixture resembles cornmeal. Add buttermilk and currants. Add caraway seeds, if using. Stir gently. Shape into a ball. Place on cookie sheet and flatten into a circle about 7" in diameter and 1 1/2" thick. Use sharp knife to cut a cross 1/4" deep on top. Bake 45 to 50 minutes. Cool on rack.


*I NEVER have buttermilk on hand! I substitute: 2 Tbsp. lemon juice with enough milk added to equal 1 1/4 cup.If batter seems too sticky, as it seems to do on some days, add up to 1/4 cup flour to handle easier. Enjoy!
