Cut tomatoes in half and place them on the tray; do not over-crowd. It takes any where from 8 to 10 hours for these to dry out (you will get a real tomato smell in the air when done). Check after the 8 hour mark for any that have dried out completely and remove. Contiue drying with the rest. (I usually do this at night before going to bed so I don't have to monitor them during the day) Make sure they are completely dried or they will go mouldy. To soften, place dried tomatoes in a bowl and pour boiling water and let sit for 5 minutes, drain. At this point you can add olive oil,(check oil is not rancid) herbs, garlic and refrigerate (Use up fairly quickly or they will go bad) Dried tomatoes will last for months in a container in the cupboard.
