Ingredients
- Butternut - halved
- Onions, chopped
- greenpepper, chopped
- celery, sliced
- Tomato, chopped
- Garlic, crushed (optional)
- Salt and pepper to taste
Directions
Halve the butternut lengthways, so that you have a hollow to place the stuffing in.
Combine all the other ingredients, and place in hollow.
Cut two squares of tin foil, and place a half on each, add 1Tsp of water and close to form an airtight packet.
Bake at 180deg Centigrade for about 45 minutes, or until soft.
Enjoy with your roast, on its own or as an accompanyment to a barbecue (in which case it can be put over the coles for about an hour!
