Skillet should be 11 inches wide and 3 inches deep.


  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 large can pineapple
  • maraschino cherries
  • nuts
  • Melt butter in heavy frying pan. I use an iron skillet.
  • Spread brown sugar over the butter, and lay pineapple on top.Arange cherries, and nuts.
  • Batter
  • 3 eggs seperated
  • 1 cup sugar
  • 5 tablespoons pineapple juice
  • 1 cup flour
  • 1 teaspoon baking powder


Beat egg yolks.
Add sugar, pineapple juice, flour and baking powder.
Beat well.
Beat egg whites untill stiff
Fold into batter.
Pour batter over pineapple
Bake 30 minutes at 350 degrees.
Turn upside down on serving plate.
