Ingredients
- Take a good amount of white rice 5 or more cups (prepare as directed)
- 1 can of mexicorn (two if you like a lot of corn, can also use reg. can of corn)
- 1 can of black beans (drain)
- 1 jar of salsa
- can add optional ingredients like more peppers and onions.
- Cumin to taste
Directions
Cook rice as directed. If adding additional onions and green or red peppers, saute these first in a bit of oil. You can then add the rice and the rest of the ingredients.
Mix well and heat thoroughly. If you really don't like salsa, you can substitue a can of diced tomatoes including the juice. This is a great side dish with any Mexican or Spanish food. Enjoy!
