Ingredients

  • 1 cup whole black or yellow mustard seeds (about 6oz)
  • 3/4 cup white wine vinegar
  • 1/4 cup sherry or other wine
  • 1-1/4 cups water, divided use
  • 1 cup dry mustard (about 3oz)
  • 3/4 cup packed light brown sugar
  • 1/2 tsp. salt

Directions

Put mustard seeds, vinegar and wine in a blender or a food processor fitted with a steel blade. Let stand for 3 hours to soften seeds. Process mixture 3-5 minutes, scraping down sides of bowl when necessary. Mustard will be smooth but grainy. Add half the water, the dry mustard, sugar and salt; blend well. Blend in remaining water. Transfer mixture to a 4-cup glass measure. Stirring with a wire whisk midway through cooking, microwave on high for 4 minutes. Store in glass jars. Makes 3 cups
