Ingredients

  • For Cake:
  • 1 four-ounce pack German sweet chocolate
  • 1 2/3 c. plain flour
  • 1 tsp. baking soda
  • 1/2 c. butter
  • 1 c. sugar
  • 1 tsp. vanilla
  • 3 egg yolks
  • 2/3 c. buttermilk or sour milk
  • 3 stiff-beaten egg whites
  • For Coconut-Pecan Frosting:
  • 1 egg
  • 2/3 c. evaporated milk
  • 2/3 c. sugar
  • 1/4 c. butter
  • dash salt
  • 1 1/3 c. flaked coconut
  • 1/2 c. chopped pecans

Directions

For Cake: Preheat oven to 350. Grease & flour two 8x1 1/2" round baking pans. Heat chocolate & 1/3 c. water til chocolate melts. Cool. Combine flour, soda, and 1/2 tsp. salt. Beat butter about 30 seconds. Add sugar & vanilla; beat til fluffy. Add egg yolks, one at a time, beating 1 minute after each. Beat in chocolate mixture. Add dry ingredients & buttermilk alternately to beaten mixture, beating after each addition. Fold in egg whites. Pour into pans. Bake in 350 degree oven 30 to 35 minutes. Cool 10 minutes. Remove from pans; cool. Fill and frost top with frosting.
For Frosting: In saucepan, beat egg slightly. Stir in milk, sugar, butter & salt. Cook & stir over med. heat about 12 minutes or til thickened & bubbly. Stir in coconut & pecans. Cool thoroughly. Spread over cake.
