I'm not the best cook, but these always get good reviews!

Ingredients

  • Olive oil
  • Medium onion
  • garlic
  • 2 cans Goya Black Beans
  • Shake of Cumin
  • 2 oz jar of chopped pimentos
  • salt and pepper to taste
  • 1/2 teaspoon sugar
  • splash of white wine
  • bay leaf
  • splash of vinegar

Directions

Saute onion and garlic. Add black beans. Add all the other ingredients. Cover and cook on med/low for 1/2 hour. If you want it thicker, uncover and let simmer and crush some beans against the edge of the pot. When ready to serve, add quick splash of white vinegar. Serve over rice.
