Ingredients

  • 1 tbsp Olive Oil
  • 1 1/2 lbs bonless chicken, skinned + cubed
  • 1/4 cup chopped onion
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1tsp ground cumin
  • 1/2tsp oregano
  • 1/2 tsp cilantro
  • 1/8 tsp ground red pepper
  • 1 can 4oz. chopped green chilis
  • 1 can white great northern beans
  • Wondra flour for thickening
  • 2 sliced green onions
  • sour cream

Directions

heat oil, add chicken and onion; let cook 4-5 minutes. Stir in broth, chilis and spices; simmer 15 minutes, longer on slow heat if you have time. Stir in beans and simmer another 5 minutes, thicken with wondra. Top with green onions, sour cream or any kind of cheese. It's wonderful
