Ingredients

  • 2 c whole wheat flour
  • 1/4 c sugar
  • 1 t baking soda
  • 1 t baking powder
  • 2 c mashed very ripe bananas (about 4 large)
  • 1/4 c skim milk
  • 1 t vanilla extract
  • 1/3 c chopped walnuts (optional)

Directions

1. In a large bowl, combine flour, sugar, baking soda, and baking powder, and stir to mix well. In a small bowl, combine the bananas, milk, and vanilla extract. Add the banana mixture to the flour mixture and stir just until the dry ingredients are moistened. Fold in the walnuts if desired.
2. Coat an 8"X4" loaf pan with cooking spray. Spread the batter in the pan, and bnake at 350 for 45 min. or until a wooden toothpick inserted in the center comes out clean.
3. Remove the bread from the oven and let sit for 10 min. Invert the loaf onto a wire rack, turn right side up, and cool to room temperature before slicitng and serving.


Makes 16 servings - per serving: 91 calories, 0 mg cholesterol, .5 g fat, 2.5 g fiber, 2.4 g protein, 75 mg sodium
