I got this recipe from one of my books which I have many the proper name for this bread is Tiger Bread. I myself am a baker and have for 16 years having worked in many very good places my most recent job as head baker at London's Dorchester Hotel in Park Lane which was a brilliant experience for me.

Ingredients

  • 600g rice flour
  • 250g water
  • 50g yeast
  • 25g caster sugar
  • 30g edible oil
  • 15g salt

Directions

the water must be about 35 C(95F) mix through the yeast then mix through the rice flour until clear. after that the salt & sugar are added.let this prove for 25 mins. just before using the oil must be added and if necessary, alittle more waterto make the pap of good consistency.the pap should not drip over the loaves and must be in a good condition to brush onto the loaves


the bread dough itself is just a normal bread dough. you brush the pap onto the dough carefully once the dough has been proved then bake as normal for a loaf of bread
