• 2 cups dry bulgur
  • 2 cups boiling water
  • parsley chopped fine, about 1/2-3/4 cup
  • lettuce chopped small, about 1 fluffy cup
  • fresh tomato, about 3, cut up in small pieces
  • cucumber, cut into small pieces, about 1/2-3/4 cup
  • mint, optional. Some people like this.
  • dressing:
  • olive oil, good quality, 1/2 cup
  • lemon juice 2/3 cup
  • salt to taste


Combine boiling water and bulgur, cover and let grain soak up the water. Using this combination it will come out just extra water.
Add cut up salad ingredients. Then add dressing, and mix.
Chill all together...bon appetit!
