Ingredients

  • 7 medium potatoes
  • 2 tbsp. tomato paste
  • 1/4 cup olive oil
  • juice of 2 lemons
  • 1 can chicken broth (or 1 1/2 cup homemade stock)
  • 1 tbsp. Greek oregano
  • 1/2 tsp. salt
  • Salt and freshly ground black pepper for adjusting seasonings just prior to serving

Directions

Peel potatoes and quarter length-wise. Place in an oiled casserole dish (covered) and microwave or bake until tender. In the meantime, make marinade by heating olive oil in a saucepan. Add tomato paste and fry for 30--45 seconds. Add remaining ingredients and simmer for 5 minutes. Pour over cooked potatoes. Let stand 15 minutes or more. If you happen to be grilling outside, remove potatoes from marinade (reserve marinade) and brown briefly on grill, then return to marinade to serve. If not grilling anything, spread potatoes into shallow baking dish and broil (under heating element) until slightly browned or just bake in a 400 degrees F oven for another 15-20 minutes. Adjust seasonings (salt and pepper) to taste before serving.

Note: If you want to simplify this whole dish, you can just put all ingredients into a shallow baking dish and bake until potatoes are tender.
