Ingredients

  • 4 - 5 large potatoes, washed and peeled
  • Olive oil
  • Salt and pepper
  • Dried oregano
  • Juice of one lemon

Directions

Preheat oven to 450 degrees. Cut potatoes into chunks. Coat a 9 x 13 inch baking dish with olive oil. Put in potatoes. Pour over enough olive oil to coat potatoes well and leave about 1/8 inch in the bottom of the pan. Sprinkle potatoes with salt, pepper and oregano. Turn potatoes with a large ladle so they are all seasoned evenly. Bake for 10 minutes; turn potatoes again. Bake for 10 more minutes, then sprinkle the lemon juice over the top, turn potatoes again and bake another 5 - 10 minutes until potatoes are lightly brown on top and cooked through. 5 - 6 servings
