You can serve this with a hearty Italian or French bread and a glass of red table wine and have it this way or serve it as a salad with a meal or as an extra with a sandwich plate instead of pickles. The sweet basil can also be torn into small pieces and added to a regular lettus garden salad and topped with your favorite dressing. Ingredients
- med red ripe tomatoes
- med sweet onion
- salt & pepper
- garlic (dried chips or flakes-not salt)
- oregano
- sweet basil
- olive oil
- red wine vinegar
Directions
slice tomatoes 1/4" thick and arrange on a platter, slice onion as thin as possible and separate the slices into rings and place a nice layer on top of the tomato, sprinkle with salt & pepper, garlic and a dash of oregano, julianne the basil and scatter all over the the ingredients in the plate, sprinkle all over with the olive oil, then "splash" all over with the red wine vinegar.
