Ingredients
- Fruit..one quart of raspberries, or a layer about two inches deep of peaches or blueberries.
- First layer:
- 3/4 cup sugar
- 3 T. butter, melted
- 1 t. baking powder
- pinch salt
- 1/2 cup milk
- 1 cup flour
- Next layer:
- 1 cup sugar
- 1 T. cornstarch
- Final layer:
- 2/3 cup boiling water
Directions
Put the fruit on the bottom of greased 8x8 inch baking dish. Mix the first ingredients and spread over the fruit. Mix the 1 cup sugar and 1 T. cornstarch and sprinkle over the batter. Pour the boiling water over the top of all.
Bake at 375 degrees for 45-60 minutes...check in middle to see if it's done.
I adjust the sugar depending on the fruit. I just made it, using black raspberries and used about 1/2 cup in the batter and 3/4 cup mixed with the cornstarch.
I've also used peaches and blueberries mixed...not too pretty, but good.
Can easily double this, but use baking dish that's large enough because it boils out and makes a BIG mess.
