Ingredients

  • 3 C AP flour + more for work surface
  • 1 C cake flour
  • 2 T sugar
  • 1.5 t baking soda
  • 1.5 t cream of tartar
  • 1.5 t salt
  • 2 T unsalted butter, softened + 1 T melted
  • 1.5 C buttermilk

Directions

1. Heat oven to 400

2. Mix dry ingredients together

3. Work butter into dry ingredients with hands or fork til resembles coarse
meal

4. Add buttermilk and stir til just comes togehter

5. Turn onto floured surface and knead til just cohesive and bumpy (12-14
turns) (if you knead til smooth, bread will be tough)

6. Pat doung into a round about 6"" in diameter and 2"" high

7. Place on parchment lined sheet pan or in cast iron pot

8. Slash a cross on the top

9. Bake 40-45 minutes or until internal temp is 180

10. Brush with melted butter when removed from oven; let cool to room temp
