Choose a deep, narrow mug, just big enough to accomodate a standard-size wire whisk. Use a rich, dark-roast coffee, preferably Starbucks--the Seattle company that helped start the expresso craze.

Ingredients

  • About 1/2 cup skim or low-fat milk
  • About 3/4 cup strong coffee
  • Ground cinnamon, nutmeg or cardamom, for garnish
  • Granulated sugar, to taste (optional)

Directions

Warm a large (1 1/2 cup capacity) mug by filling it with water; microwave on High(100%)power 2 minutes. Discard water.
Fill warmed mug one-third full with milk. Microwave on High 1 minute, or until milk is very warm. Place a wire whisk in the milk and roll the handle back and forth between the palms of your hands about 30 seconds, or until the milk becomes frothy.
Pour hot coffee over milk in mug. Sprinkle cinnamon, nutmeg or cardamon onto the foam. Taste and add sugar, if desired.

Serve hot or iced.


Makes 1(1 1/4 cups) servings
