This recipe can easily be doubled, the slow beating time is very important as it will reduce the air bubbles that are created by the high speed whipping and give you a smoother texture. To use the same frosting for flowers and decorations, simply put some in a separate bowl and add different food colorings, and add some plain sifted sugar to stiffen up the icing to hold the definition of your decorations. This frosting will be "wedding cake" white. If you substitute pure unsalted stick butter or stick margarine you will also have buttercream icing but it will be an off white which may not be sutitable for a wedding cake. If 1 stick of butter is used , decrease the shortening by that same amount. I have used both styles on several wedding cakes. I have been decorating cakes as a hoibby for the past 13-15 years. If you need any further information please feel free to contact me as this is but one of many different icing recipes that I have............Ray
