This is a favorite shower dessert of mine always receives rave reviews. With the cream cheese frosting it tastes very similar to carrot cake.

Ingredients

  • 2 cups sifted all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 stick butter or margarine
  • 1-2/3 cups sugar
  • 3 eggs
  • 1 jar (4-1/2oz) strained apricots
  • 1 jar ( 4-1/2oz) applesauce
  • 1 jar (4-1/2oz) strained carrots
  • Cream cheese Frosting
  • 3oz. cream cheese - softened
  • 1/4 cup margarine - softened
  • 2 tsp. vanilla
  • 2 cups powdered sugar or more

Directions

Preheat oven to 350. Grease a 15x10in pan. Sift together flour, soda and salt. Beat together butter, sugar and eggs in a large bowl till fluffy, about 3 minutes. Beat in baby foods. Fold in flour mixture till just combined. Spread batter evenly into prepared pan. Bake at 350 30-35 minutes. Frost when cool and cut into bars.
