Ingredients

  • 2 frying chickens, split or quartered
  • 1/2 cup catsup
  • 1/2 cup good quality dark soy sauce
  • 1/2 cup brown sugar
  • 3 tablespoons sherry
  • 1 inch piece ginger root, crushed
  • 1 clove garlic crushed

Directions

Combine marinade ingredients. Wash and dry chicken. Brush with marinade. Grill over barbeque (best flavor over charcoal instead of gas grill), turning and basting chicken with sauce until it is done, about 30 - 40 minutes. (Another recipe I have adds 1/4 cup pineapple juice concentrate.)
