I never saw this dish served with mozzerella when I lived in Italy. Calabrese refers to the region of Calabria in southern Italy. I hape you like this dish, it is very aromatic and a very pleasant tasty.

Ingredients

  • Medium ripe but firm tomatoes
  • sweet onions
  • green onions
  • red wine vinegar
  • olive oil
  • fresh sweet basil
  • grated parmesan cheese
  • salt
  • pepper
  • oregano flakes

Directions

Slice tomatoes about 1/4" thick and arrange the slices on a serving platter (get creative) salt and pepper slices to taste, julienne basil and sprinkle on tomato slices, slice onion very thin and separate into rings, place rings all over the top of tomato slices in a random pattern, drizzle olive oil all over tomato arrangement, splash red wine vinegar on top, sprinkle lightly with the grated cheese and just a very light sprinkle of organo.


Garnish with green onion brush and serve with a chilled Chianti and bread stick. May be plated on a large platter (family style) or on individual servings, size is your option, if tomatoes are very large cut the slices in half and arrange them in different patterns.
