Ingredients
- 1 chicken, quartered (2 = to 3 lbs)
- 1/4 cup chicken broth
- 1/2 cup balsamic vinegar
- 1/3 cup chopped scallions
- 2 TBSN Dijon-style mustard
- 1 TBSN sugar
- 2 tsp Worcestershire sauce
- 1 tsp dry mustard
- 1 tsp cracked black pepper
Directions
Rinse the chicken pieces and pat them dry. Arrange the chicken in a shallow baking dish. In a small bowl, combine the remaining ingredients and whisk to blend well. Pour the marinade over the chicken, cover and refrigerate for at least 24 hours, turning occasionally. Bring the chicken and marinade to room temperature.
Bake in a preheated 325-degree oven for 30 - 40 minutes. Remove the chicken from the marinade, and reserve the marinade. Place the chicken on a prepared grill and cook for 5 - 6 minutes on each side, until tender, basting with the reserved marinade. Remove skin and serve immediately.
