This is a very simple recipe which is good when time does not permit making scalloped potatoes from scratch.
Ingredients
- 1 package scalloped potato mix
- 2 l/4 cups boiling water
- 1 8 oz can whole tomatoes, cut up
- l 4oz can sliced mushrooms, drained
- 3 tblsp chopped green pepper
Directions
Heat oven to 400. Place potato slices in ungreased l l/2 quartcasserole; sprinkle with Seasoned Sauce Mix from potato package. Stir in water. Stir in tomatoes, mushrooms and green pepper. Bake uncovered about 35/40 mins til potatoes are tender
