If you like, add some shopped prosciutto along with the cream. the quality of the vodka doesn't make much difference. If you do not have penne, you can use rigatoni. If you have nothing in the house except linguini, you can use that too.

Ingredients

  • 3/4 lb. penne
  • 2 tablespoons olive oil
  • 2 to 3 hot dried chile peppers, crushed
  • 1/4 cup vodka
  • 2 cups canned crushed tomatoes
  • Salt and freshly ground pepper to taste
  • 1/4 cup heavy cream
  • Grated Parmesan cheese

Directions

1. Heat the water for pasta and cook according to package directions until almost al dente.
2. Heat the olive oil in a medium saucepan and saute the chile peppers over low heat for 30 seconds. Add vodka (mixture wil spatter), raise the heat, cook 30 seconds. Stir in the tomatoes, salt and pepper and cook 10 minutes over medium heat, stirring occasionally.
3. Reduce heat and stir in the cream; adjust seasoning. Do not allow the sauce to boil.
4. When pasta is almost cooked, drain and return to the pot. Add 3/4 cup of the sauce and cook over low heat, stirring constantly, until the pasta is al dente, about 1 minute. Place the pasta in a serving bowl and pour the remaining sauce over the top. Serve with Parmesan cheese. Makes 4 servings.
