Ingredients
- 6 slices bacon
- 2 quarts torn spinach, stems removed(one 10-oz. pkg. fresh spinach)
- 1/2 cup chopped onion
- 1 cup halved cherry tomatoes
- 1/2 teaspoon low-sodium Worcestershire sauce
- 1 tablespoon granulated sugar OR low-calorie substitute
- 1/2 teaspoon salt(optional)
- 1/4 teaspoon dry mustard
- 2 tablespoons lemon juice
- 1 tablespoon ketchup
- 3 tablespoons olive oil
Directions
Cook bacon in skillet until crisp. Drain well on paper towels. Crumble and set aside.
In a large salad bowl, combine spinach, onion and cherry tomatoes.
In small saucepan, combine Worcestershire sauce, sugar, salt, dry mustard, lemon juice, ketchup and oil. Cook over medium heat until sugar dissolves and mixture is bubbly.
Pour hot dressing over spinach mixture. Add reserved crumbled bacon and toss well. Serve immediately. Makes 6 servings
