I hope you enjoy this recipe. My family has been enjoying it for years, we use the microwave method. I have been told to never use soap to wash the clay cooker. The clay will absorb the soap.

Ingredients

  • 1 3-5 pound whole chicken
  • the following vegetables of your choice cut in to chunks or strips:
  • carrots, celery, onion, green pepper.
  • Salt, pepper, ground sage or poultry seasoning, to taste.
  • As many garlic toes as you wish, I use 2-3 either sivered or crushed.
  • 1 whole sprig of rosemary or about 1/2-1 teaspoons dried.
  • Butter, olive oil or a mixture of both to baste the chicken with.
  • You may wish to add a whole lemon cut in quarters.

Directions

Soak your clay cooker for at least 15 minutes in water. While it is soaking, wash, rinse and pat dry your chicken. Sprinkle the cavity of the chicken with your choice of seasonings and herbs and fill with your choice of vegetables. You can put a lemon in now also.

Drain the cooker and pat dry, bruch lightly with a thin layer of butter or oil. Put the stuffed chicken in to pot, back down. Brush a thin layer of oil or butter on the chicken, season as you wish. You may squeeze a little lemon on at this time. Put the cover on and either bake in a 400 degree oven for an hour or microwave on high for at least 1/2 hour depending on your microwave (check to be sur juices run clear. If not, put in for a bit more).
