This is the BEST banana bread recipe I've ever used. Be careful not to over cook it. (I usually set the time about 7-10 minutes early and check with a toothpick to see if it's still doughy inside.)


  • 1 c. sugar
  • 1/2 c. margarine
  • 1 c. mashed bananas (2-3)
  • 2 eggs
  • 2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. nuts (optional)


Cream the margarine and sugar together. Add the eggs and mashed bananas. Sift dry ingredients together, (I never really sift them!) and add to the creamed mixture. Add nuts. Bake in loaf pan for 1 hour at 350.
