Another idea is to omit bacon,thyme sprigs and bay leaves , tie chic. w/ string and dip in flour, egg and bread crumbs(seasoned) , place chicken in baking pan, pour melted butter over chic. and bake at 350 for about 20 minutes.
Ingredients
- 4-6 skinned & boned chicken breasts
 - 1/2 tsp. minced fresh thyme
 - freshly grnd.pepper
 - 2 Tbs.fresh lemon juice
 - 2 Tbs.olive oil (extra virgin)
 - STUFFING;
 - 1/2-3/4 C goat cheese (Montrachet) 1/2-3/4 C klamatas chopped
 - 1/4 C. minced scallion
 - 1 small clove garlic minced
 - 2-3 tsp. capers
 - 1/4 - 1/2 tsp. fresh lemon juice 1/4 tsp. tomato paste
 - 12 thin slices bacon
 - 6 bay leaves
 - 6 sprigs thyme
 
Directions
Arrange chicken in single layer in glass baking dish.  Sprikle on both sides w/ thyme and generous amount of pepper, then lemon and olive oil.  Cover and refrigerate 8 hours-overnight turing occasionally.
 
 For stuffing;  Combine cheese, olives, scallions, garlic, capers, 1/4 tsp. lemon jice and tomato paste in small bowl. Taste and add remaining lemon juice if desired.
 
 Blanch bacon in boiling water 5 minutes.  Drain.  Rinse with water; pat dry.
 
 Prepare grill.  Remove chicken from marinade do nt pat dry.  Arrange smooth sidedown on work surfaCE.  Pound each breast down to 1/4 inch thickness.  Spoon filling onto center of each breast. Fold sides over filling then fold in both ends to form compact cylinders.  Wrap 2 bacon strips around each, secure w/ toothpicks.  Slip bay leaf under bacon on one side of each and thyme sprig on other side.  Grill chicken til bacon begins to crisp and meat is springy t toch, about 10 minutes per side.  Slice chik. thickly across grain.
