You can alter the taste of this delicious loaf by adding 1/4 cup dark rum and lessening the quantity of mashed banana. Rum gives an exceptional flavour. Just try it!!!
Ingredients
- 250 g plain flour
- 2 tsp. baking powder
- 1/4 tsp. bicarbonate of soda
- 1/4 tsp. salt
- 1 tsp cinnamon powder
- 125 gms butter (softened)
- 200 gms sugar (powdered)
- 2 eggs
- 4 large ripe bananas (mashed)
- 60 g chopped walnuts
- 1/2 tsp.drops vanilla essence
Directions
Cream the butter and sugar until the mixture is light and fluffy. Sift together the remaining dry ingredients. After the butter-sugar mixture turns fluffy, add eggs, one at a time, and beat well. You can add a tablespoon of the sifted ingredients after the addition of each egg to prevent curdling. Then add the mashed bananas and stir gently. Then add the sifted ingredients, portion by portion, and gently folding each portion. Lastly, add vanilla essence and chopped walnuts, and stir gently. Pour the contents into a greased loaf pan and bake in a preheated oven at 180 degrees centigrade for 40-50 minutes, or until a skewer that is inserted into the centre of the loaf comes out clean.
