Ingredients

  • one-crust pie crust (your favorite recipe or a boxed pie crust mix)
  • 2 cups unpeeled, tender rhubarb, cut into 1/2 inch lengths
  • 5 good quality apples, sliced
  • 1-1/2 cups sugar
  • 1/4 cup flour
  • 2 eggs, slightly beaten
  • 2 tsp. lemon juice
  • dash of salt
  • 2 Tbl. real butter
  • 1 Tbl. sugar
  • generous sprinkling of apple pie spice

Directions

Prepare crust and spread out into a nine-inch pie pan. Preheat oven to 450 degrees. Slice rhubarb and apples into the pie crust. Mix well. In a mixing bowl, mix sugar, flour, eggs, lemon juice, and salt. Pour this mixture over the fruit. You do not stir it in--it settles into the fruit during
baking. Dot with butter, sprinkle with sugar and the apple pie spice.

Bake at 450 degrees for ten minutes. Lower the heat to 350 degrees and bake an additional 30 minutes, or until the apples have fully surrendered.
