Ingredients

  • 2/3 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1 teaspoon vanilla
  • 1/2 cup choppee nuts
  • 1 small bottle maraschino cherries, drained (reserve juice) and cut into fourths
  • 1/2 cup liquid from cherries

Directions

Grease and flour one 9 x 5 x 3-inch pan and line the bottom with wax paper. Preheat oven to 350 degrees. Cream sugar and shortening until light. Beat in eggs. Reserve 3 tablespoons flour. Combine remaining flour with baking powder and salt. Combine cherries and nuts. Add reserved 3 tablespoons flour and toss to coat. Beat vanilla and cherry liquid into egg mixture. With wooden spoon, gradually add flour mixture and stir, just until combined. Stir in nuts and cherries. Pour batter into prepared pan. Bake at 350 degrees 40-45 minutes, or until bread tests done. Don't overbake, or it gets dry. Cool in pan 5 minutes, then turn out on to a rack.
