Never made it but always wanted to and will in future. sounds o-la-la.

Ingredients

  • 1 cup butter at room temp (temperature is essential)
  • 1 whole egg, (try saving little of yolk)
  • 3 egg yolks, reserving one (or try using 2 yolks total and saving bit)
  • 1/2 c sugar
  • 1/4 t almond ext
  • 1 T orange zest
  • 1/3 t baking powder
  • 1 3/4 c flour
  • 1/4 cup ground almonds
  • 3 T OJ, divided

Directions

GATEAU BRETONNE

Preheat oven 375 degrees.
Cream together the butter, whole egg, two of the egg yolks, (reserving a bit of yolk for later) sugar and almond flavoring. Stir in the orange zest.
Sift together the flour and baking powder. Fold the flour mixure into the dough, then fold in 1 T of the orange juice. Spoon the dough into a well-buttered nine-inch pan and brush the top with the remaining egg yolk beaten with the remaining 2 T orange juice. Bake twenty-five to thirty minutes. Wrap in foil and keep twenty-four hours before serving.
