Ingredients

  • Pork Loin Roast
  • Salt, Pepper, Nutmeg
  • 6 medium potatoes
  • 3 medium onions
  • Chicken Broth

Directions

Preheat oven to 375 F. Rub roast with salt, pepper and some nutmeg. Put the seasoned roast in a dutch oven and put in oven, uncovered, and cook about 45 minutes - til roast is browned. Remove pan from oven and remove roast to a platter and keep warm. Layer the thinly sliced potatoes and onions in the bottom of the pan. Place the roast on top of the potatoes and add just enough broth to halfway cover the potato/onion layers. Cover the pan and put back in the oven at 325 F. and continue cooking for about 2 hours. Check once in awhile to make sure the liquid had not cooked away -- add a little more if necessary or take out some liquid if it seems there is too much. The potato/onion layers should not be soupy. (They will actually come out a little like scalloped potatoes.)
