Ingredients

  • 1/3 cup butter
  • 2 eggs
  • 3/4 cup dark brown sugar, packed
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp vanilla extract
  • 1 tsp grated nutmeg
  • 1/4 tsp salt
  • 1 cup plus 2 TB milk
  • 3 cups quick-cooking oats (not instant)

Directions

Melt the butter and set aside. Grease a 1-1/2 quart casserole, and drop in the eggs. Beat slightly. Add the brown sugar, baking powder, vanilla, nutmeg and salt. Mix well, making sure there are no brown sugar lumps. Whisk in the melted butter and milk, then stir in the oats. Cover and refrigerate overnight.
Preheat oven to 350 degrees F. Uncover the oatmeal and bake for 35 minutes or til the top is brown.
