This is a wonderful, easy and brightly colored dessert. My mother makes it for almost every holiday and everyone loves it. She also does the same with Strawberry jello and frozen strawberries. Hope you like it.


  • 1 Lg. box of Lime jello
  • 1 can of crushed pineapple
  • 1 small tub of coolwhip


Drain your pineapple and reserve the juice. Prepare Jello as directed on the box. Do not use the quick set method because it will not gel. Omit about 1/2c. of liquid from the recipe, this makes for a firmer jello salad. Especially if you want to prepare it in a mold. Use the pineapple juice for the cold liquid, and add water to make it the directed amount. Chill the jello until slightly semi-set. Add drained pineapple and coolwhip and beat with a mixer until blended. Pour into a mold or decorative bowl and chill until set.
