Ingredients

  • 1 1/4 cups boiling water
  • 1 cup quick oats
  • 1 stick butter or margarine (1/2 cup)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 tablespoons cocoa
  • Caramel Icing:
  • 1/2 cup butter or margarine
  • 1/2 cup brown sugar
  • 2 tablespoons milk
  • 1 1/4 cups sifted brown sugar

Directions

Put oats and butter or margarine in medium bowl. Pour boiling water over and let stand 20 minutes. Beat together sugar and eggs in large bowl. Stir in oatmeal mixture. Combine dry ingredients and stir in. Beat well. Turn into greased and floured 9 x 13-inch pan. Bake at 350 degrees for 35 minutes or until cake tests done.

For Icing:
Melt butter or margarine over medium heat. Stir in brown sugar. Bring to boil, stirring constantly. Boil 2 minutes. Add milk, stir until boiling again. Remove from heat; beat in powdered sugar. Beat until of spreading consistency. (We like more frosting, so I usually double this.)
