Ingredients

  • 4 c skim milk
  • 1/4 t vanilla extract
  • 4 T instant decaffeinated coffee, or instant decaffeinated espresso
  • 1/4 t almond extract
  • 1/2 t unsweetened cocoa, divided
  • 4 sticks cinnamon(optional

Directions

Heat milk in a medium saucepan over low heat until bubbly but not boiling, about six to eight minutes. Stir in vanilla and coffee and remove from heat. Stir in almond extract.

Pour one cup milk mixture into container of electric blender; cover and process at highest speed until frothy, about 30 seconds. Repeat three times with remaining three cups milk mixture. (You need room in the blender for expansion of the hot mixture; if you put two cups or more in, the hot mixture could erupt from the blender). Divide mixture equally into four serving mugs or large cups and sprinkle each with 1/8 teaspoon cocoa. Garnish each with a cinnamon stick, if desired. Makes four one-cup servings.
