Ingredients

  • 2 large ripe apples
  • 2 cups chicken broth (I use homemade or low-sodium canned broth)
  • 8 oz. double-cream Brie cheese

Directions

Peel, core, and coarsely chop the apples. Put the apples and chicken broth in a large saucepan and simmer 20-30 minutes, until apples are very soft.
Tranfer the mixture to a food processor and process until very smooth.
Return to saucepan and simmer.
Trim the rind from the Brie and cut the cheese into small pieces.
Slowly add the cheese and stir with a wooden spoon until melted.
The soup should be creamy and smooth.


Serves 4.
