• 8 flying fish fillets
  • 4-6 courgettes(zucchini)thinly sliced
  • Salt and pepper
  • 6 tomatoes, peeled and sliced
  • 2 onions finely chopped
  • 2 cloves garlic crushed
  • 1 1/4 cups 97 1/2 oz.) brown rice cooked
  • 2 tbs. parsley chopped
  • 4 tbs fresh herbs chopped
  • 3 tbsp (1 1/2 oz.) butter or margarine
  • 3 tbsp (1 1/2 oz.) flour
  • 2 cups (1 pint) milk
  • 3/4 cup (3 oz.) grated cheese


Lightly grease a large baking dish and arrange the sliced zucchini around the sides and bottom. Slice the fish fillets into strips and add to the dish,seasoning well with salt and pepper. Add the sliced tomatos.In a separate pan, lightly cook the onion and garlic in a little oil,then stir in the cooked rice,parsley and herbs. Add the rice mixture into the baking dish and level the top. Make the cheese sauce and pour it over the pie,decorating the top with a little more parsley or grated cheese. Bake at 400*F. for 30 minutes. Serves 6
