Ingredients
- 1 pound dried white beans
- A ham bone with some meat on it
- 3 onions, finely chopped
- 2 garlic cloves, finely chopped
- 1 small bunch of celery, finely chopped
- 1 cup cooked mashed potatoes
- 1/4 cup chopped parsley
- salt and pepper to taste
Directions
Soak 1 pound beans in cold water to cover overnight. Drain the beans and put them in a soup kettle with 3 quarts water and the ham bone. Bring the water to a boil and simmer the soup for about 2 hours. Stir in the onions,garlic cloves, celery, mashed potatoes, parsley and salt and pepper. Simmer the soup for 1 hour longer, or until the beans are thoroughly cooked. Remove the ham bone, dice the meat, and return to the soup before serving. Enjoy..
