Ingredients

  • In a small bowl, combine:
  • 1-1/2 c. all-purpose flour
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1/4 teaspoon ground nutmeg
  • In a separate large bowl, combine:
  • 1 c. sugar
  • 1 c. finely shredded unpeeled zucchini
  • 1/4 c. cooking okl
  • 1 egg
  • 1/4 tsp. lemon peel
  • Add:
  • 1/2 c. chopped walnuts

Directions

in the small mixing bowl, combine the flour, cinnamon, baking soda, salt, baking powder & nutmeg. In the large bowl, combine the sugar, shredded zucchini, cooking oil, egg, and lemon peel. Mix well. Add the flour mixture just until combined. Stir in the chopped nuts (add raisins if desired). Pour batter into a greased 8 x 4 x 2" loaf pan. Bake in a 350 oven for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack.
