Ingredients

  • 1kg potatoes, chopped
  • 30g butter
  • 1 egg lightly beaten
  • 1/4 cup packaged breadcrumbs
  • 1/4 cup grated tasty cheese
  • paprika
  • BEEF FILLING
  • 1 tblspn oil
  • 500g minced beef
  • 1 onion chopped
  • 410g can tomatoes
  • 2 tblspns worcestershire sauce
  • 1 tspns beef stcok powder
  • 1/2 tspn dired basil leaves
  • 1 tblspn plain flour
  • 1/2 pkt frozen mixed vegies (anything you desire)
  • 1 sml tin corn kernels
  • 1/3 cup water.

Directions

Boil, steam or microwave potatoes until tender, drain. Mash potatoes in large bowl with butter, cool, stir in egg. Sprinkle half the breadcrumbs over base and sides of greased shallow ovenproof dish (4 cup capacity). Spread a 1/3 of the potato mixture over base of prepared dish, top with beef filling. Spoon remaining potato into paping bag, pipe over filling, sprinkle with remaining breadcrumbs, cheese and paprika. Bake uncovered, in moderate oven about 35 minutes or until lightly browned.
BEEF FILLING Heat oil in pan, add mince and onion, stir over heat until mince is browned. Stir in mixed vegies, and corn, stir in undrained crushed tomatoes, paste, sauce, stock powder and basil. Bring to boil, simmer uncovered, until mince is tender. Stir in blended flour and water, stir over heat until mixture boils and thickens.
