Ingredients
- 1 1/2 lbs. lean ground beef
- 1 cup chopped onions
- 1 tsp. salt
- Pepper to taste
- 1/4 tsp. minced garlic
- 1 (10 3/4 oz.) can cream of chicken soup
- 1 (10 3/4 oz.) can cream of mushroom soup
- 1/2 cup green chilies, chopped
- 1/2 can mild enchilada sauce
- 1 dozen tortillas
- 3/4 lb. Cheddar cheese, grated
Directions
Heat oven to 350 degrees. Lightly grease baking dish. Brown ground beef in heavy skillet, stirring until color changes. Add onions and continue to stir over moderate heat for about 5 minutes. Season as desired with salt, pepper and garlic. Add soups, chilies, and enchilada sauce. Mix well. Cut tortillas in quarters and line bottom of baking dish. Cover with half the meat mixture; add another layer of tortillas, then meat. Cover with grated cheese. Bake for 30 minutes.
Serves 6-8.
